A Compassionate Edge

I am always hunting for the next dish to try, the next restaurant to visit and the next guest to interview. A story in a San Francisco newspaper about Akindele Bankole caught my eye.


He’s a vegan restaurant owner with a stunning list of accomplishments. So, of course, I had to talk to him. He was most gracious, both with our chat and with the food he shared with me afterward!


German-born Nigerian American Akindele Bankole is a classical singer and composer, with over two decades in the food industry. He is the primary owner of Veg On The Edge, Inc., a West African-inspired, vegan, gluten-free, kosher and mostly-organic restaurant in downtown Santa Cruz, CA.
