Just one day a week, with only plant based eats. It's easy to do and can make more of an impact than you might imagine.
Here is a hearty recipe that will help you transition into a Meatless Monday.
Bubble and Squeak
- 1 lb. Yukon Gold Potatoes, cut small and boiled until tender
- 2 TBS Olive Oil
- 1/4 Onion, cut into small chunks
- 1/4 head Green Cabbage, cut into chunks
- 1 pkg. Vegan Smoked Apple Sage Sausage
Heat a good sized sauté pan over medium high heat.
Pour in the oil, swirl to coat the pan and heat through.
Toss in the potatoes and onions, stirring and cooking until starting to brown.
Add in the cabbage and sausage. Again, keep stirring from time to time, until the sausage is brown and the cabbage is wilted and browning.
Season with salt and pepper and chow down!
